I had so much fun catching up recently with the delightful Jules Sebastian for a cup of tea and some cupcakes (my recipe) for the latest episode of her Tea With Jules show. You can watch the full interview here.
For anyone who wants the cupcake recipe, here it is:
Maggie’s Cupcake Recipe
200 grams unsalted butter soft
3/4 cup castor sugar
1 3/4 cups SR flour
3 X 70 grams eggs
Vanilla to taste (I love the paste)
Place ingredients into a bowl and beat until smooth with beater. A hand beater works fine – sometimes I need to add 1-2 table spoons of yoghurt depending on texture … if too dry. Then put into patty cake thingies and put inside muffin tins – this helps keep them in great shape. Ice with butter cream.
My granddaughters now make these…oxoxox
